Dinner 7/1/02...It's 105° in Kalkaska!

Choose your favorite hummus, to spread on a wonderful bread. I chose a slightly sweet bread. Olives, carrot sticks and maybe some feta cheese would be good as side dishes. |

For the main dish, a salad. Raw carrots and beets, grated, form the base. Add vinegar and oil to taste (I used olive oil and balsamic vinegar), salt, and a fair amount of fresh ground pepper. Raisins and any fresh herbs tossed in are wonderful. I added tarragon, chives, hyssop and oregano. Toss all together and serve on top of mixed fresh greens. |

For dessert, a whole watermelon, eaten on the back porch, so you can spit the seeds (but ours was seedless!) We did get a chance to run the hose on our feet!
"Cocktails" were sparkling grape juice with a splash of grapefruit, vodka and a sprig of mint.
